I had the privilege of having a cooking class with Sicilian chef Carmela D'Amore. It was a cooking class with a difference.
'All my experiences have brought me to this place in time right now. My passion to pass on the zest for life through Sicilian cooking is the driver for these cooking classes. My decades of work as a Sicilian chef have taught me that food can heal, food can link you to a forgotten heritage, food can stir up and reveal the essence of you.'
And that's exactly what happened, I arrived having dreamt of her gnocchi made with decades of family skill handed down generation to generation. I had tasted it earlier this year and that was all I dreamt of since. Carmela had sat and decided on what colors we were working with prior to my arrival, the vegetables were all red and green, the herbs were chosen for their healing properties and it was exactly what I needed.
Carmela's mission is to inspire you to connect with food and find that it is your teacher. To find appreciation, gratitude, and an amazing love for life. Food is much more than simply nourishment or fuel.
'Food is the communicator of families, when you look back, it is the special times in life, when you sat at your table and took the time to eat a meal, the memories that you created for future generations are stored in the chronicles of their own minds. Carmela's nurturing was amazing I felt like I was her 'figlio' (son) even though she is too young to be my mamma and I was also blessed with the presence of Marco, her husband, a master baker whose passion for flour .... and I mean flour ...is unparalleled. We sat and shared the meal over a glass of italian wine and she me packing with left overs and gifts like any good Mum.
